Low-Fat Banana Bread Recipe

Low-Fat Banana Bread Ingredients:

  • 2 large eggs
  • 3/4 cup sugar
  • 1 cup smashed very ripe bananas (about 3 medium)
  • 1/3 cup buttermilk
  • 1 tablespoon coconut oil(melted)or vegetable oil
  • 1 tablespoon vanilla extract
  • 1 1/4 cups all purpose flour
  • 1/4 cup ground flaxseed
  • 1/4 cup wheat germ
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Low-Fat Banana Bread Directions:

Preheat oven to 325°F. Lightly grease three mini loaf pans 5.75 inches x 3 inches. Using an electric mixer, beat eggs and sugar in large bowl until thick and light in color, about 4-5 minutes. Meanwhile, smash bananas in a separate bowl. Add smashed bananas, buttermilk, oil and vanilla to the egg-sugar mixture and mix on low until incorporated. Sift flour, flaxseed, wheat germ, baking powder, baking soda and salt over mixture and mix on low until just blended. Pour batter into three mini loaf pans.

Bake bread until golden brown around the edges and tester inserted into center comes out clean, about 30-35 minutes. Turn over the bread loafs onto a rack to cool. Makes 3 mini bread loafs.
