Bacon Wrapped Salmon with Maple Balsamic Glaze


Please note the bacon in this dish adds a lot of flavor without adding a lot of fat. Each serving of salmon offers only one piece of bacon per cut, so the total amount of fat from one piece of bacon is 2.5 fat grams. This is a negligible amount for the amount of flavor.  This delicious salmon dish offers a healthy, gourmet meal very easy to make! You can always substitute with turkey bacon.

Bacon Wrapped Salmon Ingredients:

1 lb. Wild-Caught Salmon
3 slices of Oscar Meyer’s Uncured Premium Select Smoked Bacon (No Nitrates)
1/4 c. maple syrup
1/4 c. balsamic vinegar
1 TBSP. orange juice
1-2 garlic cloves (minced)
1/2 TBSP. honey (omit to make less sweet)
1 TBSP. soy sauce
Salt and Pepper to taste

Bacon Wrapped Salmon Directions:

1. Preheat oven at 300 degrees. Cut salmon into three separate pieces. Lightly salt and pepper salmon to taste. Place a slice of bacon on the flesh side to cover entire flesh side of each piece (you will need to cut the bacon in order to cover the entire side). Place 1 tablespoon olive oil in medium fry pan on set on medium/high heat until oil is almost smoking.  Pan sear salmon on medium-high heat for 3-4 minutes on both sides until center is opaque in color. Place salmon in oven at 300 degrees.

2. In a medium sauce pan, combine all other ingredients on medium heat until it reduces to almost half.  This glaze will be a thinner consistency.

3. When glaze is finished, remove salmon from oven and place 1 tbsp. of glaze over each piece of salmon. Serve immediately.
