Slim-Down Taco Salad

If you are craving mexican food, this taco salad will hit the spot without guilt! Because of the balance of fiber, carbohydrates, protein, and vegetables, you will stay full longer and the flavors and textures are satisfying to the palate. Eating salads on a diet can get boring and not to mention make you feel like you are actually on a “diet”. This taco salad recipe is wonderful for the whole family as a complete dinner option while perfectly fitting into your slim-down eating plan or healthy nutritional lifestyle. For an alternative, non-salad option,  just add a tortilla and skip the blue corn chips for a healthy burrito, or for kids try filling a divided plate with all the ingredients to make it “fun” to make their own burrito or dip blue corn chips into a little cheese, lettuce, rice, and ground turkey.

Taco Salad from Leah’s Kitchen

  • Romaine Lettuce – chopped
  • Roasted corn or a can of Mexicorn
  • Tomatoes – diced
  • Low fat Mexican Cheese
  • Blue Corn Chips
  • Red onion- minced
  • Black beans
  • Avocado
  • 1 lb. of ground turkey
  • Taco seasoning packet
  • Cilantro
  • Brown rice

Taco Dressing:

Use your favorite salsa or mix low-fat/fat-free sour cream with taco sauce until you get a thin consistency and lightly drizzle over salad.

Taco Salad Directions:

Using a non-stick pan, cook and brown the ground turkey. Follow the directions from the taco seasoning packet. Set aside. Cook the brown rice according to package on the stovetop or in a rice cooker.

Chop the salad into small bite-sized pieces. Warm up the corn and beans on the stovetop or in the microwave. Slice the avocado by first cutting the avocado in half and remove seed. Then run a knife along the inside of avocado on each half to make small squares being careful to not pierce through the skin. Then gently scoop the avocado out with a spoon. Mince the onion and dice the tomato and set aside.

Make the salad by starting with layers. Layer the salad starting with romaine lettuce, corn, beans, tomatoes, onions, and avocados. Sprinkle cheese and crush a handful of blue corn chips over the salad.  Add a handful of the seasoned ground turkey and half a handful of brown rice over the salad. Drizzle the dressing or salsa over the salad. Make sure to go light with the salad dressing and add some as you need it for taste. Mix all of the ingredients together using salad tongs and sprinkle some chopped cilantro on top. Enjoy!
